Easy One-Pot Dinner with Leftover Magic π₯
There’s something so comforting about a one-pot meal. Fewer dishes. Less chaos. More time to actually enjoy dinner without a stack of pans staring at you from the sink.
And this one? It’s one of my ride-or-die recipes that’s flexible, forgiving, and leftover-friendly. AKA: Mom gold.
π Ingredients You Probably Already Have
- 1 lb ground turkey or beef (or lentils if you’re feeling veg)
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can of diced tomatoes
- 1 cup broth (chicken or veggie)
- 1 cup pasta or rice
- Seasonings: paprika, oregano, salt, pepper, a pinch of red pepper flakes
- Optional: cheese to sprinkle on top, or spinach to stir in at the end
See? Pantry-friendly and super customizable.
π©π³ How I Make It
- Heat up your Pampered Chef Rockcrok or Nonstick Skillet
- SautΓ© onion and garlic until fragrant
- Add the ground meat and cook through
- Toss in tomatoes, broth, pasta or rice, and all your seasonings
- Simmer until everything’s cooked and cozy
I usually top it with shredded cheese and toss in a handful of greens right before serving. Boom — dinner’s done.
π₯‘ Leftovers That Actually Get Eaten
Leftovers don’t scare me anymore thanks to my Tupperware Vent ’N Serve containers. These babies:
- Keep food fresh without soggy weirdness

- Stack neatly in the fridge so I can see what I’ve got
