3-Ingredient Dinners That Saved My Sanity This Week ๐ฝ️
Some weeks, I’m crushing the meal prep game. Other weeks… I’m just thankful we didn’t order takeout four nights in a row. ๐
This week was one of those weeks, and let me tell you — the only reason we had legit meals on the table was because of my ride-or-die: 3-ingredient dinners. Seriously. THREE.
And no, I’m not talking about boring or bland. These meals are fast, flavorful, and totally saved my mom brain. Bonus: I made them all using my Pampered Chef favorites and a few fridge staples.
๐ฅฆ 1. Sheet Pan Sausage & Veggies
Ingredients:
- Chicken sausage (pre-cooked)
- Chopped veggies (I used bell peppers + zucchini)
- Olive oil + seasoning blend (try PC’s Garlic & Herb!)
Instructions: Toss everything in oil and seasoning, throw it on a sheet pan, and roast at 425°F for 20 minutes. Boom. Dinner. I use my Pampered Chef stone bar pan for the perfect crisp.
๐ 2. Creamy Tortellini Alfredo
Ingredients:
- Refrigerated cheese tortellini
- Jarred Alfredo sauce
- Frozen peas or spinach
Instructions: Boil tortellini, toss with sauce, and stir in veggies while everything’s hot. I heat & serve it all in my Rockcrok Everyday Pan — less mess, less stress.
๐ฎ 3. Lazy Girl Taco Bowls
Ingredients:
- Ground turkey
- Taco seasoning (DIY or a packet)
- Microwaveable rice + canned black beans
Instructions: Brown the turkey, stir in seasoning. Microwave rice + beans and serve together as a bowl. Add cheese, salsa, or a scoop of sour cream if you’re feeling fancy. I meal prep this in my Tupperware Vent ’N Serve containers — perfect for leftovers or lunch the next day!
